Ingredients

  • 1 3/4 c. flour
  • 1 c. oats
  • 1/4 c. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg, slightly beaten
  • 1 c. milk
  • 1/3 c. vegetable oil
  • 1/2 lb. bacon, crisply cooked
  • 1/2 c. shredded Cheddar cheese
  • 1/3 c. green pepper, finely chopped
  • 1/3 c. onion, finely chopped

Directions

    In large bowl, stir together flour, oats, sugar, baking powder and salt; set aside.

    In small bowl, mix egg, milk and oil.

    Pour all at once into oat mixture, stirring just until moistened.

    Fold in bacon (crumbled), cheese, green pepper and onion.

    Fill greased muffin pans 2/3 full.

    Bake in a 400° oven for 15 to 18 minutes. Makes 1 dozen muffins.
