- 1 3/4 c. flour
- 1 c. oats
- 1/4 c. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 egg, slightly beaten
- 1 c. milk
- 1/3 c. vegetable oil
- 1/2 lb. bacon, crisply cooked
- 1/2 c. shredded Cheddar cheese
- 1/3 c. green pepper, finely chopped
- 1/3 c. onion, finely chopped
Directions

1In large bowl, stir together flour, oats, sugar, baking powder and salt; set aside.

2In small bowl, mix egg, milk and oil.

3Pour all at once into oat mixture, stirring just until moistened.

4Fold in bacon (crumbled), cheese, green pepper and onion.

5Fill greased muffin pans 2/3 full.

6Bake in a 400° oven for 15 to 18 minutes. Makes 1 dozen muffins.
