Ingredients

  • 8 slices bacon, cooked crisp
  • 1/2 c. corn flake crumbs
  • 5 eggs
  • 2 1/2 c. frozen hash brown potatoes
  • 1 1/2 c. (4 oz.) shredded Cheddar cheese
  • 1/2 c. cottage cheese
  • 1/2 c. milk
  • 1 green onion, chopped
  • 1/8 tsp. pepper

Directions

    Crumble bacon, reserving 1 tablespoon drippings; set aside. Mix cornflake crumbs with drippings.

    In medium bowl, beat eggs until foamy.

    Stir in remaining ingredients, except bacon and crumbs.

    Pour into 8 or 9-inch casserole dish, greased.

    Sprinkle with bacon and crumbs.

    Cover and refrigerate overnight.
