- 1/2 c. corn flake crumbs
- 5 eggs
- 2 1/2 c. frozen hash brown potatoes
- 1 1/2 c. (4 oz.) shredded Cheddar cheese
- 1/2 c. cottage cheese
- 1/2 c. milk
- 1 green onion, chopped
- 1/8 tsp. pepper
Directions

1Crumble bacon, reserving 1 tablespoon drippings; set aside. Mix cornflake crumbs with drippings.

2In medium bowl, beat eggs until foamy.

3Stir in remaining ingredients, except bacon and crumbs.

4Pour into 8 or 9-inch casserole dish, greased.

5Sprinkle with bacon and crumbs.

6Cover and refrigerate overnight.
