- 4 large cornmeal or flour tortillas
- 4 large eggs
- 4 to 8 strips bacon, fried crisp or 1 c. chopped ham or 1 c. sausage
- 2 large potatoes, peeled and chopped
- 1/4 c. oil
- salt and pepper to taste
Directions

1Brown potatoes in oil in skillet.

2Remove from pan.

3Fry bacon or sausage (brown ham if desired).

4Scramble eggs in skillet.

5Add meat and potatoes to eggs.

6Mix well.

7Salt and pepper to taste. In another skillet, heat tortillas, one at a time, in hot skillet. Take about 1 minute to heat both sides per tortilla.
