Breakfast Tortillas

  • 4 large cornmeal or flour tortillas
  • 4 large eggs
  • 4 to 8 strips bacon, fried crisp or 1 c. chopped ham or 1 c. sausage
  • 2 large potatoes, peeled and chopped
  • 1/4 c. oil
  • salt and pepper to taste

Directions

    Brown potatoes in oil in skillet.

    Remove from pan.

    Fry bacon or sausage (brown ham if desired).

    Scramble eggs in skillet.

    Add meat and potatoes to eggs.

    Mix well.

    Salt and pepper to taste. In another skillet, heat tortillas, one at a time, in hot skillet. Take about 1 minute to heat both sides per tortilla.
