Breakfast Tortillas

Ingredients

  • 1 lb. mild ground sausage
  • 1 large red pepper, chopped
  • 2 large green peppers, chopped
  • 1 (4 oz.) can mushrooms, drained (optional)
  • 1 large onion, chopped
  • 2 Tbsp. butter or margarine
  • 1 lb. sharp Cheddar cheese, shredded
  • 10 eggs
  • 10 flour tortilla shells (large)
  • oil (enough to put 1/4-inch in bottom of skillet or frypan)

Directions

    Brown sausage in one frypan.

    Saute in butter the chopped onions, peppers and mushrooms until tender.

    Add meat to the vegetables and stir.

    Remove from the heat.

    Fry the tortilla shells in oil until it bubbles (about 10 seconds each side). Place fried tortillas on paper towels.
