- 1600 grams strong flour/T55 flour
- 75 grams yeast
- 12 eggs
- 60 grams salt
- 60 grams sugar
- 75 grams milk powder
- 700 ml water
- 600 grams butter (softend)
Directions

1place flour, salt, sugar and milk powder into mixing bowl

2activate yeast in a little water

3add eggs and yeast plus sufficient water to form an elastic dough, knead lightly and place into proving cabinet.

4allow to double

5remvoe from prover, return to machine and add the softend butter, mix well- the dough will have a spongy effect

6scale of: 50g for rolls; 550g for loaves

7roll, shape, glaze, mould and prove.

8Bake 200 celcius (400 F)
