- 1 (6 to 7-pound) first-cut beef brisket
- Homemade Dry Rub
- 1 head garlic, peeled and thinly sliced
- 20 peeled and very thinly sliced fresh ginger
- 6 shallots, thinly sliced
- 2 onions, thinly sliced
- 1/4 cup brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon fresh ground black pepper
- Apple Barbecue Sauce
- 1 onion, peeled and chopped
- 1 chipotle pepper, in adobo sauce, chopped
- 1 garlic clove, minced
- 1 cup applesauce
- 1 cup ketchup
- 1/2 cup honey
- 1/4 cup molasses
- 1/4 cup soy sauce
- 1 tablespoon Worcestershire sauce
- 1 lemon, juice of
- salt & freshly ground black pepper
- Assembly
- 8 onion hamburger buns, lightly toasted
- tomatoes, slices for garnish
- lettuce, for garnish
- deep-fried onion rings, for garnish

1Preheat the oven to 200 degrees F.

2For the homemade dry rub:

3On a parchment paper-lined baking tray, put the garlic, ginger, shallots, and onions and bake in the oven 4 hours, or until dried. Using a food processor, reduce into a powder with the brown sugar, salt, and pepper. Set aside.

4Coat the brisket with the spice mixture. Cover and keep in the refrigerator overnight to marinate and flavor the meat.

5For the apple barbecue sauce:

6In a large bowl, mix together the onion, chipotle pepper, garlic, ketchup, honey, molasses, soy sauce, Worcestershire sauce, lemon juice, salt, and pepper, to taste.

7Preheat the oven to 350 degrees F.

8Place the brisket, fat-side up, into a heavy baking pan just large enough to hold it, and pour sauce over it. Cover tightly and bake for 4 hours or until fork-tender.

9Transfer the brisket to a cutting board and keep warm.

10Strain and pour the sauce in a stockpot and let reduce for about 10 minutes on medium high heat until thick. Remove excess fat.

11Cut the meat with a sharp knife against grain, to desired thickness.

13Garnish onion buns with the meat, sauce, tomatoes, lettuce and top with deep-fried onion rings.

15You can buy dried onions and garlic from grocery stores instead of preparing it. The apple barbecue sauce is a recipe on its own and very versatile. It can be used as a dip, as a sauce or as a glaze for other meats like chicken, pork, etc.

16The brisket can be served on its own and served with mashed potatoes and vegetables.

17Brisket can also be sliced and frozen for later use.

18Make the brisket the day before and reheat for best flavor.
