Broccoli Casserole

- 3/4 c. uncooked rice
- 2 pkg. frozen, chopped broccoli, thawed
- 1 can Pet milk
- 1 can cream of chicken soup
- 1/2 lb. Velveeta cheese, cubed
- 1 large onion
- 1 stick margarine
- 1 can sliced water chestnuts
Directions

1Saute onion slightly in margarine.

2Add soup and milk.

3Mix in cheese, broccoli, rice and water chestnuts; simmer 10 minutes. Pour into a large, greased casserole dish.

4Bake 1 hour at 325°. (Mixture should be creamy, not dry.) Casserole can be made a day or two ahead or frozen for later use.
