Broccoli Casserole

  • 2 (10 oz.) pkg. frozen broccoli
  • 1 can cream of mushroom soup
  • 1 c. mayonnaise
  • 2 eggs, beaten
  • 1 c. grated sharp cheese
  • pepper to taste
  • 4 Tbsp. chopped onion
  • seasoned bread crumbs or Ritz crackers (for topping)

Directions

    Cook broccoli for 5 minutes in boiling water.

    Drain well. Combine soup, mayonnaise, eggs, cheese, pepper and onion. Pour into a 2-quart baking dish, greased.

    Sprinkle with crumbs and dot with butter.

    Bake at 350° for 30 to 45 minutes or until it bubbles and browns.

    Serves 8.
