Broccoli Cheddar Jack Soup

- 1/2 cups Chopped Onion
- 1/2 cups Grated Carrot
- 1/4 cups Butter, Cubed
- 1/4 cups All-purpose Flour
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1-1/2 cup 2% Milk
- 3/4 cups Chicken Broth
- 2 cups Cooked Chopped Fresh Or Frozen Broccoli
- 2 cups Shredded Cheddar Jack Cheese
Directions

1In a small saucepan, saute onion and carrots in butter until tender.

2Stir in the flour, salt and pepper until blended; gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened.

3Add broccoli. Cook and stir until heated through. Remove from the heat; stir in cheese until melted.

4Garnish each serving with more cheese.
