Broccoli Cheddar Jack Soup

  • 1/2 cups Chopped Onion
  • 1/2 cups Grated Carrot
  • 1/4 cups Butter, Cubed
  • 1/4 cups All-purpose Flour
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 1-1/2 cup 2% Milk
  • 3/4 cups Chicken Broth
  • 2 cups Cooked Chopped Fresh Or Frozen Broccoli
  • 2 cups Shredded Cheddar Jack Cheese

Directions

    In a small saucepan, saute onion and carrots in butter until tender.

    Stir in the flour, salt and pepper until blended; gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened.

    Add broccoli. Cook and stir until heated through. Remove from the heat; stir in cheese until melted.

    Garnish each serving with more cheese.
