Broccoli Cheddar Mashed Potatoes

  • 2 pounds potatoes, peeled, cut into 2-inch pieces
  • 3 cups chopped broccoli florets
  • 2 tablespoons Land O Lakes Butter
  • 1/3 cup finely chopped red bell pepper
  • 1 teaspoon finely chopped fresh garlic
  • 1 1/2 cups shredded Cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

    Place potatoes in 4-quart saucepan; add enough water to cover.

    Bring to a boil; cook over medium heat 10 minutes; add broccoli florets.

    Continue cooking 5-7 minutes or until potatoes and broccoli are fork tender; drain.
