Broccoli Cheese Soup

  • 1 1/4 lb. fresh broccoli
  • 5 Tbsp. melted butter
  • 7 Tbsp. flour
  • 5 c. canned or fresh chicken broth
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. grated cheese (1/2 Velveeta and 1/2 mild Cheddar)
  • 1/4 tsp. nutmeg
  • 1/2 c. milk

Directions

    Wash and chop broccoli.

    Cook 5 minutes in boiling salt water. Melt butter in a 2 or 3-quart pan.

    Add flour, stirring to keep smooth.

    Add broth to butter/flour mixture, stirring

    constantly to deep smooth.

    Cook until thick and bubbly.

    Add broccoli to soup base and simmer for 10 minutes.

    Add seasonings, cheese, nutmeg and milk.

    Stir until all ingredients are well blended.
