Broccoli-Cheese Soup

  • 2 Tbsp. minced onion
  • 1 Tbsp. butter or margarine
  • 2/3 c. (about 1/2 jar) homestyle chicken gravy
  • 2/3 c. milk
  • 1 c. fresh chopped broccoli florets
  • pepper to taste
  • nutmeg to taste
  • 1/2 c. (2 oz.) grated Swiss cheese
  • chicken stuffing mix or herb stuffing mix (optional)

Directions

    Place onion and butter in 1 1/2-quart microwave-safe casserole.

    Cook at High, uncovered, for 1 minute.

    Stir in gravy, milk, broccoli, pepper and nutmeg.

    Cook, covered, at High for 2 minutes; stir.

    Cover and cook 2 to 3 minutes longer or until broccoli is tender.

    Stir in cheese.

    Cover and cook at Medium (50%) for 1 to 2 minutes or until cheese is melted.

    Stir. Garnish with stuffing mix, if desired.
