Broccoli Chowder Soup(Serves 4)

- 1 lb. broccoli
- 3 c. milk
- 1/4 tsp. salt
- 1/2 c. half and half or milk
- 2 Tbsp. butter or margarine
- 1 c. shredded Swiss or mild Cheddar cheese (about 4 oz.)
- 1 1/2 c. chicken broth
- 1 c. cubed cooked ham
- 1/8 tsp. black pepper
Directions

1Trim the leaves and coarse stems from the broccoli and cut the stems and florets into bite size pieces.

2Meanwhile, bring the chicken broth to a boil in a 3-quart saucepan.

3Add the broccoli and cook, uncovered, for 5 minutes, or until the broccoli is crisp-tender.

4Using a slotted spoon, remove the broccoli from the saucepan, chop coarsely and set aside.
