- 2 eggs
- 1 c. cottage cheese
- 1 pkg. frozen chopped broccoli, thawed
- 3/4 c. chopped onion
- 1/2 c. oleo, melted and divided
- 2 (8 1/2 oz. each) pkg. corn bread muffin mix
Directions

1In a mixing bowl, lightly beat eggs.

2Add cottage cheese, broccoli, onion, 6 tablespoons oleo and muffin mix.

3Beat well. Pour remaining oleo into a 10-inch iron skillet; pour batter into skillet.

4Bake at 350° for 40 to 45 minutes or until golden.

5Cut into wedges and serve warm.
