- 1 c. frozen chopped broccoli (one 10 oz. pkg.), thawed and well drained
- 2/3 c. nonfat cottage cheese
- 1/2 c. chopped onion
- 1/2 c. egg substitute
- 2 Tbsp. plus 2 tsp. margarine, softened
- 1/4 tsp. salt
- 6 oz. self-rising white cornmeal
Directions

1Preheat oven to 350°.

2Spray a 9-inch glass pie plate with nonstick

3cooking spray; set aside.

4In large mixing bowl, combine broccoli, cottage cheese, onion, egg substitute, margarine and salt until blended.

5Stir in cornmeal.

6Scrape mixture into prepared pie plate.

7Smooth to make even layer.

8Bake for 30 minutes, until golden brown.

9Let stand for 10 minutes before serving.
