  • 1 (10 oz.) box frozen chopped broccoli, thawed and drained
  • 1 medium onion, chopped
  • 6 oz. low-fat, small curd cottage cheese
  • 4 eggs, beaten
  • 1/4 tsp. salt (optional)
  • 1 small box Jiffy corn bread mix

    Combine first 5 ingredients.

    Add dry corn bread mix.

    Spray 11 x 9-inch glass pan with Pam.

    Preheat oven to 425°. Bake 20 to 25 minutes or until brown.
