Broccoli Cornbread

  • 1 box Jiffy cornbread mix
  • 4 eggs
  • 1 stick oleo
  • 1 c. grated sharp Cheddar cheese
  • 1/2 c. chopped onion
  • 1 (10 oz.) pkg. frozen chopped broccoli

Directions

    Cook broccoli in boiling water 5 minutes, drain.

    Melt oleo in skillet.

    Add beaten eggs to broccoli along with onion, cheese, melted oleo and bread mix.

    Beat well.

    Pour into pan or skillet. Bake at 350° until golden.
