  • 1 (8 1/2 oz.) box Jiffy corn muffin mix
  • 10 oz. frozen, chopped broccoli, cooked and drained
  • 1 medium onion, chopped
  • 1 c. grated sharp Cheddar cheese
  • 4 eggs, well beaten
  • 1 stick butter or margarine, melted

Directions

    Mix all ingredients and pour into a large, hot iron skillet, greased with 2 tablespoons of vegetable oil.

    Bake at 350° for 35 to 45 minutes.
