Broccoli Cornbread

- 1 (10 oz.) pkg. frozen chopped broccoli, thawed
- 1 (8 1/2 oz.) pkg. cornbread mix
- 3 eggs, beaten
- 1 medium onion, chopped
- 1 c. (4 oz.) shredded Cheddar cheese
- 1/2 c. butter, melted
- 1/2 tsp. salt
- 1/4 to 1/2 tsp. garlic powder
- 1/4 tsp. ground red pepper
Directions

1Press broccoli between paper towels to remove excess moisture. Combine cornbread mix, eggs, chopped onion, cheese, butter and seasonings.

2Stir well.

3Stir in broccoli (batter will be thick). Pour mixture into a greased 8-inch square pan.

4Bake at 375° for 25 to 30 minutes or until golden.

5Cool slightly and cut into squares.

6Yields 9 to 12 servings.
