Broccoli-Ham Chowder Soup

- 2 lb. fresh or frozen broccoli
- 3 c. milk
- 3 c. chicken stock
- 1 c. chopped ham
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 c. half and half
- 2 c. grated Swiss cheese
- 1/4 c. butter
Directions

1Wash broccoli.

2Place broccoli and 1/2 stock in large kettle. Bring to a boil, reduce heat and cover.

3Simmer 7 minutes or until tender.

4Remove broccoli.

5Add the remaining stock, milk, salt, cheese and pepper.

6Bring to a boil over medium heat.

7Stir.
-
8Stir in cream, cheese, butter and broccoli.

9Heat until the cheese melts, but do not boil.

10To make thick, add 4 to 5 tablespoons cornstarch.
