- salad oil
- 3 medium carrots, thinly sliced
- 1 medium onion, chopped
- 3/4 lb. sliced mushrooms
- 12 lasagna noodles
- 1 lb. Mozzarella cheese, shredded
- 15 oz. Ricotta cheese
- 2 large eggs
Directions

1In undiluted soup, heat frozen or fresh broccoli. In 1 tablespoon oil, cook onion until light brown. Add carrots. Reduce heat to low. Add 1/4 cup of water; cover and simmer 15 minutes or until tender. Remove to bowl.
