Broccoli Puffs

  • 1/2 c. butter
  • 1 c. water
  • 1 tsp. salt
  • pinch of garlic powder
  • 1 c. all-purpose flour, sifted
  • 4 eggs
  • 1 (10 oz.) pkg. frozen chopped broccoli, cooked and drained
  • 1/2 c. Parmesan cheese, grated

Directions

    Combine butter, water, salt and garlic powder in saucepan. Heat until water is boiling and butter is melted.

    Add flour all at once.

    Remove from heat and stir mixture quickly until dough comes away from sides of pan.

    Add eggs one at a time, beating well after each addition.

    Stir broccoli into dough.

    Chill 2 hours or overnight.

    Pour oil into deep skillet and heat to 375°. Drop heaping teaspoonful of mixture into oil.

    Brown on one side about 2 minutes, then turn and brown on other side.

    Drain. Sprinkle with Parmesan cheese and serve hot.
