  • 1 pie crust (not baked)
  • 1 c. well drained, cooked and chopped broccoli
  • 1/4 c. minced onion
  • 8 oz. shredded Swiss or Cheddar cheese, grated and divided
  • 4 eggs, slightly beaten
  • 1 c. evaporated skim milk
  • 1/8 tsp. pepper
  • bacon bits
  • finely chopped ham (optional)
  • 1 c. sliced mushrooms

    Combine veggies.

    Spread 1/2 of cheese in pie shell.

    Add veggies.

    Combine eggs, milk, 1/2 teaspoon salt (optional) and pepper.

    Pour over veggies.

    Top with remaining cheese.

    Bake at 325° for 50 to 60 minutes or until knife comes out clean.
