- 1 1/2 c. cooked rice
- 1 c. grated Cheddar cheese
- 3 eggs
- 1 tsp. salt
- 1/4 c. chopped onion
- 10 oz. frozen chopped broccoli
- 1/4 c. milk
- 1/4 tsp. pepper
- 4 oz. sliced mushrooms
Directions

1Cook rice.

2Add onions to broccoli and cook.

3Combine rice, 1/2 cup cheese, 1 egg and 1/2 teaspoon salt.

4Press firmly in a greased 9-inch pan to form crust.

5Combine broccoli, milk, pepper, mushrooms, eggs and 1/2 teaspoon salt.

6Mix.

7Spoon into crust. Bake at 375° for 20 to 25 minutes.

8Sprinkle with cheese; bake 5 minutes longer.
