- fish fillets or small fish
- 4 Tbsp. cooking oil
- cornmeal
- 4 Tbsp. butter or margarine
- 1 lemon
Directions

1Salt and pepper the fish and dredge them in cornmeal or a cornmeal-flour mixture.

2Heat the cooking oil until hot.

3Place fish in the pan and turn the heat down.

4Brown the fish and prevent them from sticking to the pan with a spatula (takes about 8 to 10 minutes on each side; do not overcook).

5When the fish are done, remove them and add the butter or margarine to the skillet. Squeeze lemon juice into the fat, stir and sprinkle this over the fish before serving.
