Broccoli Souffle

Ingredients
- 2 large stalks broccoli
- 4 eggs
- 1/2 c. milk
- 1 Tbsp. flour
- 1 Tbsp. Accent
- 1 tsp. salt or more (if desired)
- 1 c. grated Swiss cheese
- 2 c. Ritz cracker crumbs
- 1/2 c. (1 stick) margarine or butter
Directions

1Cook broccoli in small amount of water until tender.

2In a small bowl, beat eggs, milk, flour, Accent and salt.

3Chop broccoli into small pieces and add to egg mixture.

4Add Swiss cheese.

5Pour into a 2-quart baking dish.

6Sprinkle crushed crackers on top.

7Melt margarine and pour over top of crackers. Bake at 300° about 45 minutes to 1 hour, until knife inserted in center comes out clean.

8Cook with aluminum foil over top, loosely covered.
