Broccoli Soup

Ingredients
- 1 1/2 c. chopped broccoli or 1 (10 oz.) pkg. frozen broccoli
- 1/4 c. diced celery
- 1/4 c. chopped onion
- 1 c. low-sodium chicken broth
- 1/4 c. grated Swiss cheese
- 2 c. nonfat milk
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- dash of pepper
- dash of ground thyme
Directions

1Place vegetables and broth in saucepan.

2Bring to boiling. Reduce heat; cover and cook until vegetables are tender, about 8 minutes.

3Mix milk, cornstarch, salt, pepper and thyme.

4Add to cooked vegetables and cook, stirring constantly, until soup is lightly thickened and mixture just begins to boil.

5Remove from heat.

6Add cheese and stir until melted.

7Makes 4 servings of 1 cup each.
