- 2 cup stock (chicken, veggie, beef, etc.)
- 1 cup quinoa
- 2 portobello mushrooms, diced
- 2 tbsp butter
Directions

1Bring stock to boil in medium pan.

2Add quinoa, cover, and reduce heat to low simmer.

3Allow to cook for approximately 20 minutes, or until moisture is absorbed.

4In a pan saute garlic and diced portobello until browned without cooking to the point of dehydration.

5Add portobello to quinoa and serve warm.
