Broccoli Soup

  • 2 (10 oz.) pkg. frozen broccoli
  • 3/4 c. chopped onion
  • 1/2 c. shredded carrots
  • 6 c. chicken broth
  • 1/2 tsp. garlic salt
  • 6 c. milk (4 c. canned, 2 c. bottled)
  • 1 lb. Velveeta cheese, grated or small cut
  • 1/2 tsp. basil

Directions

    Saute onions in butter (don't brown much). Add milk and heat (don't boil). Add cheese and all other ingredients.

    Add more salt, if desired.

    Makes 4 quarts. Can be frozen.
