  • 1 head broccoli, chopped coarsely
  • 1 quart vegetable stock
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 cup walnuts

Directions

    Bring stock to boil.

    Add pinch of salt.

    When broccoli turn very bright green but before they turn dark green, drain.

    Reserve stock.

    Add broccoli and salt and pepper to blender.

    Add preferred amount of stock based on desired consistency.

    Pulse until blended.

    Serve with some walnuts.
