Broccoli Spinach Soup

Ingredients

  • 6 c. water
  • 6 vegetable or chicken bouillon cubes
  • 10 oz. pkg. frozen chopped broccoli
  • 10 oz. pkg. frozen chopped spinach
  • 1 carrot, pared and sliced
  • 1 rib celery, sliced
  • 1 medium onion, diced
  • salt and pepper to taste

Directions

    Heat water to boiling and add bouillon.

    Stir in remaining ingredients. Cover and simmer 20 minutes.

    Transfer to blender or food processor and puree until smooth (in several portions, if necessary).

    Reheat if necessary or serve at room temperature. Makes 6 servings at 40 calories each.
