Broccoli with Lime & Cumin Dressing

- 1 pound broccoli florets
- 1 each limes juice and zest
- 1/2 teaspoon salt
- 3/4 teaspoon cumin
- 1 x red hot pepper sauce to taste, we like 1 teaspoon of Frank's Red Hot
- 3 tablespoons olive oil, extra-virgin
Directions

1Separate the broccoli head into florets.

2Peel and slice up the stem.

3Steam broccoli for about 4 minutes, no more then 5 minutes.

4DO NOT OVERCOOK.

5The broccoli should be just barely tender.

6Meanwhile in a large bowl add the lime juice and zest, cumin, salt and hot pepper sauce to taste.

7Whisk together.

8While whisking slowly drizzle in the olive oil to form an emulsion.

9Add the steamed broccoli, toss to coat and serve.

10Top with fresh ground black pepper if desired.
