Broccoli With Rice

  • 1 medium onion, chopped
  • 1 rib celery, chopped
  • 1 Tbsp. margarine
  • 1 pkg. chopped broccoli, fresh or frozen
  • 1 can cream of celery soup
  • 2 c. cooked rice (white or brown)
  • 2 drops Tabasco (optional)
  • 1/2 c. bread crumbs
  • 1/4 c. Parmesan cheese

Directions

    Preheat oven to 350°.

    In large skillet, saute onion and celery in margarine until clear.

    Cook broccoli until tender. Drain well.

    Add to onion and celery, stir in rice and Tabasco. Add soup and cheese.

    Pour into greased casserole and top with bread crumbs.

    Bake for about 20 minutes until bubbly.
