- 7 15/16 ounces shortcrust pastry
- 2 1/2 cups broccoli florets
- 2 tablespoons tomato ketchup
- 3 eggs
- 1 1/4 cups milk
- 1 salt and pepper
- 15/16 cup gruyere grated
Directions

1Line a 230mm flan dish with the shortcrust pastry.

2Cook the broccoli in a small amount of boiling salted water until crisp and still bright green. Drain.

3Spread the ketchup over the base of the pastry case.

4Scatter the drained broccoli florets over the ketchup.

5Beat together the eggs milk salt and pepper and half the grated cheese and pour over the broccoli.

6Sprinkle on the remaining cheese.

7Bake on the floor of the roasting ovenfor 30 minutes until the quiche is golden brown and set.
