- 2 small eggplant or 1 large, cut into 4 lengthwise slices
- salt
- bread crumbs
- Parmesan cheese
- olive oil
- 1 clove garlic
Directions

1Make crisscross cuts in inside surface.

2Sprinkle with salt and pepper.

3Mix a crushed clove of garlic with about 1/4 cup olive oil; brush over eggplant.

4Sprinkle lightly with mixture of fine dry bread crumbs and grated Parmesan cheese.

5Drizzle with a little more oil.

6Place in greased broiler pan and broil, very, very slowly until golden on top and eggplant is tender.

7Takes 10 to 20 minutes depending on thickness of vegetable.

8No need to turn eggplant.
