- 1 1/2 lb. mackerel
- 1/4 c. olive oil
- 1/4 c. lemon juice
- 1 Tbsp. chopped parsley
- 1 Tbsp. basil
- 1/2 c. Parmesan cheese
- 1/2 tsp. chopped garlic
Directions

1Cut fish into serving pieces; arrange in shallow ovenproof dish.

2Combine olive oil, lemon juice, parsley, basil, cheese and garlic in bowl; mix well.

3Pour over fish.

4Marinate for 1 hour, turning several times; drain.

5Broil for 5 to 7 minutes or until fish flakes easily.

6May grill 4 to 6 inches from coals for 5 to 7 minutes on each side, if preferred.
