- 2 lb. beef shin, cut into 1-inch cubes
- 1 qt. water
- 1/2 c. diced onion
- 1/4 c. diced carrots
- 1/4 c. diced celery
- 1 sprig parsley, minced
- 1/4 tsp. thyme
- 1/4 tsp. marjoram
- 8 peppercorns
- 5 cloves
- 1 Tbsp. salt
Directions

1Heat pressure cooker.

2Melt marrow; brown beef cubes.

5Place pressure regulator on vent pipe.

6Cook 15 minutes.

7Let pressure drop on its own accord.
