- 6 c. thinly sliced, unpeeled zucchini squash, cooked and drained
- 2 slightly beaten egg yolks
- 1 c. dairy sour cream
- 2 Tbsp. flour
- 2 stiffly beaten egg whites
- 1 1/2 c. shredded Cheddar cheese
- 6 slices bacon, cooked crisp
- 1 Tbsp. melted butter
- 1/4 c. crushed crackers
Directions

1Salt squash to taste.

2Mix first 3 ingredients.

3Fold in egg whites.

4Lay 1/2 of the squash, egg mixture and cheese in a 12 x 7 1/2 x 2-inch baking dish.

5Crumble bacon and sprinkle on top of that and repeat layers.

6Mix butter and crumbs and sprinkle on top of that.

7Bake at 350° for 20 to 25 minutes.

8Serves 8 to 10.
