- 4 c. whole grain pastry flour or spelt flour
- 1 tsp. salt
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 Tbsp. honey (optional)
- 2 c. soured soy or rice milk *
- 1 c. raisins (preferably soaked in hot water before use)
Directions

1Preheat oven to 350°.

2In a large bowl, sift together the dry ingredients.

3In a small bowl, mix together the wet ingredients. Pour the wet mixture into the dry mixture, and combine with a fork.

4Add the raisins.

5Cut the dough in half and place each into 2 greased round cake pans.

6Bake for 30 to 35 minutes.
