- 2 (14 ounce) cans reduced-sodium beef broth
- 1 cup onion, chopped
- 12 cup fresh mushrooms, chopped
- 14 cup celery, chopped
- 14 teaspoon dried thyme
- 18-14 teaspoon pepper
- cooking spray
- 2 tablespoons flour
Directions

1Combine first 6 ingredients in a medium saucepan and bring to a boil.

2Cook 15 minutes or until liquid is reduced to 2 cups.

3Strain mixture through a sieve into a bowl; discard solids.

4Coat a medium skillet with cooking spray and place over medium-high heat until hot.

5Add flour and cook 2 minutes or until browned, stirring constantly.

6Transfer flour to a large bowl and cool completely.

7Add 1/4 cup broth mixture to flour and stir well with a whisk.

8Add remaining broth mixture; whisk well.

9Pour mixture in pan and place over medium-high heat.

10Bring to a boil; reduce heat and simmer 3 minutes or until thick, stirring constantly.
