Brown Rice Pudding

  • 1 cup brown rice
  • 10 tablespoons apple juice concentrate frozen
  • 1 1/2 cups milk, skim, evaporated
  • 2 large eggs
  • 1/2 teaspoon cinnamon
  • 1/2 cup raisins, seedless optional
  • 1 tablespoon almonds slivered, toasted, optional, or more
  • 1 teaspoon vanilla extract optional

Directions

    Cook rice as usual, but replace 6 tablespoons of water with 6 tablespoons of the apple juice concentrate.

    Beat the remaining ingredients (execpt nuts together in pot.

    Mix in rice and cook 8 to 10 minutes until thick, stirring almost constantly.

    Spoon into dishes and chill.

    Sprinkle with nuts, if desired.

    If you like it sweeter drizzle with some maple syrup or sprinkle with a teaspoon of brown sugar.
