Ingredients
- 4 c. all-purpose flour
- 3 c. whole wheat flour
- 2 tsp. salt
- 1 Tbsp. baking soda
- 4 tsp. cream of tartar
- 2 tsp. superfine sugar
- 4 Tbsp. butter
- up to 3 3/4 c. buttermilk (or skim)
Directions

1Lightly grease a baking sheet.

2Preheat oven to 375°.

3Sift all dry ingredients into a large bowl.

4Rub the butter into flour mixture.

5Then add enough buttermilk to make a soft dough.

6Knead lightly until smooth and transfer to the baking sheet.

7Shape into a large round about 2 inches thick.

8Using a floured handle of a wooden spoon, form a large cross on top.

9Bake for 40 to 50 minutes at 375° until risen and firm.

10Cool for 5 minutes before transferring to wire rack to cool.

11Makes one 2-pound loaf.
