- 4 cups apples, peeled and chopped small
- 1/2 cup oil
- 1/4 cup applesauce
- 2 eggs
- 1 cup brown sugar
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking soda
- 2 cups flour (i use whole wheat pastry flour)
- 1/2 cup walnuts, chopped

- 5 tablespoons butter
- 3/4 cup brown sugar, packed
- 1/4 cup whipping cream
- 1/2 teaspoon vanilla
Directions

1whisk oil, applesauce and sugars together until smooth. whisk in eggs.

2add apples and vanilla, stir to combine.

3sift dry ingredients and stir until moist- it will be VERY thick, add walnuts.

4spread into a greased 13x9 in pan.

5bake at 350 for 35-40 minutes.

6heat butter, sugar and cream until boiling, simmer whisking 4-5 minutes.

7stir in vanilla and pour over hot cake.

8serve warm with vanilla ice cream.
