- 4 English muffins, split and quartered
- 6 slices cheese, your choice
- 200 g smoked salmon
- 4 eggs, beaten
- 1 cup milk
- 1 teaspoon mustard powder, such as coleman
- 1 -2 onions, chopped or 3 spring onions
- 200 g baby asparagus
- salt
- pepper
- paprika
Directions

1Spray a 13 X 9 inch pan with non stick spray.

2Place muffins, cut side up, in the pan.

3Top with cheese.

4Layer smoked salmon.

5Sprinkle onions on top.

6Now,layer baby asparagus on top of this.

7Keep aside.

8Beat eggs, one at a time, in a bowl.

9Add dry mustard and milk.

10Mix well.

11Season with salt and pepper.

12Pour egg mixture over the entire casserole.

13Sprinkle paprika over this.

14Cover.

15Refrigerate overnight.

16Preheat oven to 180 degrees C.
