Brunch Fruit Salad

Ingredients

  • 20 oz. pineapple chunks
  • 2 large bananas, cut into chunks
  • 1 c. green or red grapes
  • 1 yellow apple
  • 1 red apple
  • 1 can (15 oz.) mandarin oranges, drained
  • 1/2 c. sugar
  • 2 Tbsp. cornstarch
  • 1/3 c. orange juice
  • 1 Tbsp. lemon juice

Directions

    Drain pineapple and save juice.

    Combine pineapple, bananas, grapes, oranges, and apples in a large bowl.

    Set aside.

    In a sauce pan, combine sugar, cornstarch, orange juice, lemon juice, and pineapple juice.

    Stir until smooth.

    Bring to a boil. Reduce heat and cook for 2 minutes, stirring constantly.

    Cool.

    Pour cooled mixture over fruit and mix gently.
