- 1 teaspoon olive oil
- 1 cup onion, diced
- 1/2 green pepper
- 6 large eggs
- 1/2 cup milk
- salt and pepper, to taste
- 1 (4 ounce) can green chilies
- 4 ounces chopped olives
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 3 cups rice, cooked
- 1 cup Mexican blend cheese
- 8 -12 tortillas
Directions

1Saute onions in olive oil for a minute, then add peppers.

2Whisk eggs, milk, salt, and pepper until foamy.

3Add chililes and olives along with chili powder and cumin.

4Add egg mixture to skillet and cook until beginning to set, then add rice and cheese.

5Stir to break up rice.

6Continue to cook and stir until no longer runny.

7When fully cooked, serve in tortillas.
