  • 1 teaspoon olive oil
  • 1 cup onion, diced
  • 1/2 green pepper
  • 6 large eggs
  • 1/2 cup milk
  • salt and pepper, to taste
  • 1 (4 ounce) can green chilies
  • 4 ounces chopped olives
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 3 cups rice, cooked
  • 1 cup Mexican blend cheese
  • 8 -12 tortillas

Directions

    Saute onions in olive oil for a minute, then add peppers.

    Whisk eggs, milk, salt, and pepper until foamy.

    Add chililes and olives along with chili powder and cumin.

    Add egg mixture to skillet and cook until beginning to set, then add rice and cheese.

    Stir to break up rice.

    Continue to cook and stir until no longer runny.
