- 1/4 cups Red Onion, Sliced
- 1 clove Garlic
- 1 teaspoon Olive Oil, Plus More To Saute Onion And Garlic
- 1 whole Tomato, Peeled And Chopped
- 1 Tablespoon Fresh Basil, Chopped
- 1/4 teaspoons Fresh Oregano, Chopped
- 1 dash Salt To Taste
- French Bread, Toasted And Rubbed With Garlic, To Serve
- 1 dash Shaved Parmesan (optional)
Directions

1Saute red onion and garlic in a drizzle of olive oil till tender.

2Remove from heat and let cool.

3Mix tomato, herbs, salt, and olive oil.

4I like tomato seeds and left them in the mixture.

5Then mix in the cooled onion mixture.

6Let stand for 15 minutes before serving.

7I serve this on top of toasted and garlic-rubbed French bread for a little spice.

8Top with parmesan, if desired.
