Ingredients

  • 8 whole Roma Tomatoes, Diced
  • 1/4 cups Onion, Chopped Finely
  • 1/4 cups Shredded Parmesan Cheese
  • 2 cloves Garlic, Minced
  • 1/4 cups Fresh Basil, Chopped
  • 2 Tablespoons Balsamic Vinegar
  • 2 teaspoons Olive Oil
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Ground Pepper
  • 2 loaves Baguette Bread
  • 1/4 cups Melted Butter

Directions

    Mix all ingredients together except bread and butter.

    Refrigerate for at least 1 hour before serving.

    Just before serving, thinly slice baguette and place on a cookie sheet.

    Brush melted butter over the bread and place under a broiler until lightly toasted, approximately 2 minutes.

    Serve toasted bread alongside the bruschetta.
