Bruschetta Mozzarella

- 1 Tablespoon Olive Oil
- 3 cloves Garlic
- 1 pint Roma Tomatoes
- 8 ounces, weight Fresh Mozzarella
- 12 leaves Fresh Basil
- 1 Tablespoon Balsamic Vinegar
- 1/2 teaspoons Salt
- 1/4 teaspoons Freshly Ground Black Pepper
- 1/2 whole Baguette, Sliced In Half-inch Slices
- 4 Tablespoons Unsalted Butter
Directions

1Heat olive oil in a small frying pan over medium heat.

2Mince the garlic and add to the hot oil; saute for 34 minutes, stirring frequently, until the garlic is a light golden color.

3Empty the garlic and oil into a medium mixing bowl.

4Dice the tomato and slice the mozzarella into small pieces, about the size of a thick coin.

5Chiffonade the basil by stacking the leaves, tightly rolling them lengthwise, and then slicing the resulting log into thin strips.

6Add the tomatoes, cheese, and basil to the mixing bowl.

7Add the balsamic vinegar, salt, and pepper and mix thoroughly.

8Set the bowl aside while you prepare the bread.

9Place an oven rack in the center of the oven and preheat the broiler on high.

10Slice the baguette and spread the slices on a cookie sheet in a single layer.

11Melt the butter completely and brush lightly over each piece of bread.

12Toast the bread under the broiler for 4-5 minutes or until the edges of the bread are golden-brown, but keep a close eye on it so it doesnt burn.

13Remove the tray and place the bread on a serving plate.

14Serve immediately.
