- 5 1/2 c. water
- 2 c. dry pinto beans
- 2 cloves garlic, chopped
- 1 1/2 onions, chopped
- 2 bay leaves
- 1/4 lb. salt pork, cut up
- 2 c. canned tomatoes
- 1/2 c. green peppers, chopped
- 2 tsp. chili powder
- 2 Tbsp. brown sugar
- 1/2 tsp. oregano
- salt to taste
Directions

1Cook beans in boiling water for 2 minutes; remove from heat and let stand 1 hour.

2Return to heat; add onions, garlic, bay leaves and salt pork.

3Cover and bring to a boil; reduce heat and simmer and cook for 1 1/2 hours.

4Add remaining ingredients except salt.

5Cover and bring to a boil; reduce heat to simmer and cook for 2 more hours.

6Salt to taste.
