Ingredients

  • 5 1/2 c. water
  • 2 c. dry pinto beans
  • 2 cloves garlic, chopped
  • 1 1/2 onions, chopped
  • 2 bay leaves
  • 1/4 lb. salt pork, cut up
  • 2 c. canned tomatoes
  • 1/2 c. green peppers, chopped
  • 2 tsp. chili powder
  • 2 Tbsp. brown sugar
  • 1/2 tsp. oregano
  • salt to taste

Directions

    Cook beans in boiling water for 2 minutes; remove from heat and let stand 1 hour.

    Return to heat; add onions, garlic, bay leaves and salt pork.

    Cover and bring to a boil; reduce heat and simmer and cook for 1 1/2 hours.

    Add remaining ingredients except salt.

    Cover and bring to a boil; reduce heat to simmer and cook for 2 more hours.

    Salt to taste.
